A warm sweet potato is drizzled with raw honey, melted almond butter, chia seeds, cinnamon, fresh banana slices, and wild blueberries.
I feel like sweet potatoes are a staple in the "health" community. Soft and savory, they are technically a bit better for you than starchy white potatoes. I haven't always liked sweet potatoes, but as my taste buds have matured and FINALLY come to their senses: They're one of my favorite foods!
This recipe is definitely not as quick as I'd like for a busy morning. Well, if you bake the potato the night before, or keep a few ready in the fridge to warm up, then the toppings come together very quickly. Of course, if you have the time, you can always cook it in the morning. The SP takes about an hour to bake, so while it's in the oven, you can finish some cleaning, or shower, or catch up on some reading. (I'm currently reading Light in August. Not a big fan so far, but who knows, maybe I'll like it later!) This recipe, while potentially time consuming, is incredibly yummy! It's filling, as a result of the rich protein and fiber found in the SP and all the toppings! You'll be full until lunch, which is the perfect time to make my favorite strawberry-feta salad!
This meal is the epitome of a perfect fall breakfast. It'll warm you up on those chilly autumn mornings and the earthy cinnamon and gooey almond butter are complementary with the season as well.
Loaded breakfast sweet potato with melted almond butter and fresh fruit
1 large sweet potato, washed
1/2 half of a banana, sliced
1/4 cup fresh or thawed frozen blueberries
1 tsp chia seeds
2 Tbsp almond butter, melted
honey, to taste (if vegan, use maple syrup or agave nectar)
ground cinnamon, to taste
1. Preheat oven to 425 F. Bake sweet potato for about 1 hour, or until soft when poked with a fork. When finished baking, let cool for about 15 minutes.
2. Slice sweet potato in half and line inside with bananas and blueberries.
3. Warm almond butter in the microwave and drizzle over the potato, along with the honey, chia seeds, and ground cinnamon. Add any other toppings you desire.
